Hello,
   I personally don't care for black miso.  It has a very strong taste.
My favorite chanko recipe is:
Boil water
Add 1/2 teaspoon of Hon-dashi (powdered soup flavoring) per person.  2
cloves smashed garlic, and about 1 tablespoon of white miso per person
(taste it as you go, I like extra garlic).  Add meat, tofu, greens,
noodles etc. I like to use chrysanthumum leaves (kiku) in the winter.
Minced chicken and garlic make great little meat balls.
Use Pons (citrus flavered sause) for dipping.

Itadakimasu!
Onigiri
